What do you do with a glut of blackberries? Make blackberry pancakes of course. Okay, it’s not the only thing you can do with them and regular readers will know I’ve already posted a couple of recipes using our forages blackberries. This one is a as simple as they come, requires no weighing out at all and is ready in mere moments.
Blackberry Pancakes
Ingredients
- 1 cup self-raising flour
- 1 cup soya milk (you can use regular cows milk too)
- 1 large egg (free range)
- 1 tsp baking powder
- 1 tsp vanilla extract
- 2 tbsp sweetener (e.g. Canderel)
- 1/2 cup fresh blackberries
- coconut spray oil
Instructions

In a medium bowl combine the flour, baking powder, sweetener, milk, eggs and vanilla extract. Mix until you have a smooth batter.

Add the blackberries and gently combine until they are all covered in batter.

On a hot plate or large frying pan, heat a few sprays of oil then pour approximately 1/4 of the mixture (ensuring there are some blackberries in there) onto the pan. Heat until bubbles start appearing then flip the pancakes over.

Heat the reverse side for a minute then remove. Repeat until you've used all the mixture.

Serve with fresh blackberries and low-fat Greek yoghurt.
